Groundnut is a member of the legume family. It is native to some regions in the world and also successfully grown in other parts of the world. Groundnut is known for its vast nutritional and health benefits. It is very rich and can be consumed roasted, boiled, raw and they can also be grounded for
cooking which is equally very tasty. Groundnuts have five major nutrients. They are carbohydrate, protein, phosphorous, thiamin and niacin, which are used to maintain and repair the tissues in the body. These nutrients are found in large quantity in groundnut. Groundnut is also rich in vitamins and it has 26 essential minerals like calcium, iron, zinc, boron etc. These essential minerals help the brain to function and develop and they also help to maintain strong bones. Groundnut is also rich in anti-oxidants which is good for optimum health.
Groundnut soup is a very spicy and tasty soup that is linked to the Ghanaians but mostly cooked by the northerners and in some parts of southern Nigeria. It is very delicious and it is prepared using roasted groundnut, oziza seeds, beef, scent leaves etc. In some cases peanut butter can be used as a substitute for grounded groundnuts, whichever way you prefer it. It can be served with Fufu, Eba etc.
Ingredients:
•Roasted groundnuts
• Smoked fish
•Stock fish
•Cow skin
•Beef
•Periwinkle
•Oziza seeds
•Fresh pepper
•Palm oil
•Salt
•Seasoning
•Scent leaves
•Water
• Onion
•Crayfish
Method
•Place the washed beef, cow skin, stock fish in a pot. Add onions, salt and seasoning and boil
•To form the groundnut paste, blend the roasted groundnut and oziza seeds with crayfish and blend thoroughly
•Blend the fresh pepper and set aside
•After boiling, add the washed smoked fish and boil for some minutes
•Add palm oil, pepper, the periwinkle, stir and allow to cook
• Add the grounded groundnut paste little by little with a little water
•Stir and add the scent leaves and cook for some minutes
•Taste before adding more salt and seasoning
• Stir and allow to cook
•Serve hot with fufu, pounded yam, or eba
